My Recipes for The First Ever Clean Recipe Challenge!!

Inspired by my mom and dad coming by for a visit this morning, I created each of their favourite home made pies, for mom: Traditional Apple and for dad: Classic Chocolate Pecan Pie

Zain’s Clean Traditional Apple Pie (Gluten Free)

Ingredients:

Crust (for 1 mini pie)

1/8 Cup Oat Flour (Oats Blended in Magic Bullet or Food Processor)

1/8 Cup Brown Rice Flour (Brown Rice Blended in Magic Bullet or Food Processor)

1 Tsp Coconut Oil

1/2 Tbsp Almond Butter

1/8 Cup Unsweetened Almond Milk

Pinch of Salt

1 Tbsp Pumpkin Puree

Cooking Spray

Filling (for 1 mini pie)

1 Apple (Peeled and Cored)

1/8 Cup Unsweetened Apple Sauce

1 Tbsp Pumpkin Puree

1 Whole Egg

2 Tbsp Sugar-Free Syrup (Butter Flavour)

1/16 Tsp Cinnamon

1/16 Tsp Nutmeg

1/16 Tsp All Spice

1/8 Tsp Vanilla

1-2 Packets of Splenda, Stevia OR 1 Tsp Honey

Directions:

1. Pre-heat oven to 350 degrees

2. In a bowl, mix together ingredients for crust and spray mini pan (I use a 4” round dark coated pan)

3. Once ingredients are mixed, pat down crust in pan (I love this crust because it does not involve rolling or freezing but I do have a recipe for this one too which I will post, it is not gluten-free however)

4. Bake crust for 15 minutes until slightly hardened

5. While crust is baking you can peel and core apple and place in bowl

6. Beat egg with a fork or in a blender until frothy and pour on top of apple then add remaining ingredients to the bowl and mix until all the apples are coated (I cut my apples in chunky cubes because of the size of my pan but you can use slices if making a full sized pie)

7. Remove crust from oven and spoon filling on top

8. OPTIONAL: If you wish to decorate your pie with a peak top just create the same portion of crust that you initially made and roll it in the palm of your hands. Then, take a rolling pin and roll out the crust until you create a circular formation. You can lay the flat crust on top of the apple filling pinching the edges and carving a small hole on top to create a peak. For a lattice top (the one I did) just cut the circular crust into strips and weave them through to create your pattern, place on top of your pie

9. Bake for 40-45 minutes or until pie is golden

They just finished their last bites and mom said it was delicious!!
